Strawberry sauce:
- 1 cup sugar
- 1 cup water
- 4 cups sliced strawberries
- ½ teaspoon lemon zest
Dessert:
- 1 (10-ounce) package of fresh strawberries
- ½ cup whipping cream, whipped
- Two oranges, peeled and cut into sections.
Preparation time: 15 minutes.
Stir sugar into water in a medium saucepan over low heat until sugar dissolves. Increase heat to high; boil for 3 minutes without stirring. Remove from heat; stir in berries and zest. Let stand, stirring occasionally.
To serve, spoon fruit into four dessert dishes or parfait glasses. Top each serving with a large dollop of whipped cream and orange sections. Spoon strawberry sauce over all and serve immediately.
3.- Dessert made with orange juice and cinnamon
- ½ cup orange juice
- Four teaspoons cornstarch
- One tablespoon sugar
- ½ teaspoon ground cinnamon
Two oranges, peeled and sectioned. Pour water into a small saucepan to a depth of 2 inches; bring to a boil over medium-high heat. Add apricots and cook for 3 minutes. Drain in a colander and rinse with cold water.
Preparation time: 5 minutes.
Beat the orange juice, cornstarch, sugar, and cinnamon until smooth. Pour into a small saucepan and heat on medium heat until it starts to boil while stirring constantly. Remove from heat and add oranges sections. Chill before serving. Serve over pound cake or angel food cake.
4.- Fruit salad with yogurt and pineapple
- ½ cup water
- 1 (6-ounce) can of crushed pineapple, undrained
- ¼ cup sugar
- Two tablespoons of lemon juice
1 (1-pound) container strawberry yogurt. Pour the water into a blender; add the pineapple, sugar, and lemon juice. Blend until smooth.
Cover and chill for 2 hours or overnight. Beat the yogurt into the pineapple mixture before serving in dessert dishes or parfait glasses. Top each with half of the sliced strawberries.
5.- Dessert made with raspberries, cranberry sauce, and chocolate bits
- 2 cups fresh raspberries
- Six tablespoons of cranberry sauce
½ cup chocolate bits. Combine 1 cup of the raspberries, one tablespoon of the cranberry sauce, and ¼ cup of the chocolate bits in a blender or food processor; blend until smooth. Pour into a bowl and repeat with remaining ingredients. Cover and chill for 2 hours or overnight.
